Green Papaya Salad

  1. Cut the papaya in half lengthways and scrape out the seeds. Peel the papaya and then shred using a grater.
  2. In a mortar, or large bowl, place the garlic, eschallots, chillies and salt and grind with a pestle, to a rough paste.
  3. Slowly add the papaya, a little at a time and pound until limp and soft.
  4. Cut the beans in 2cm lengths and add the beans and tomato to the mortar and crush slightly.
  5. Season with the fish sauce, sugar and ,lime juice.
  6. Transfer the salad to a serviing dish and garnish with the red chilli and serve
