Green Papaya Salad
Ingredients
- 1 green papaya
- 4 roughly chopped garlic cloves
- 1 tablespoon chopped eschallots
- 4 red chillies, seeded and sliced
- salt to taste
- 6 green beans
- 2 tomatoes, seeded and cut into thin slices
- 3 tablespoons fish sauce
- 1 tablespoon of sugar
- juice of 1 lime
- 2 tablespoons crushed roasted peanuts
- 1 fresh red chilli seeded and sliced for garnish
Directions
- Cut the papaya in half lengthways and scrape out the seeds. Peel the papaya and then shred using a grater.
- In a mortar, or large bowl, place the garlic, eschallots, chillies and salt and grind with a pestle, to a rough paste.
- Slowly add the papaya, a little at a time and pound until limp and soft.
- Cut the beans in 2cm lengths and add the beans and tomato to the mortar and crush slightly.
- Season with the fish sauce, sugar and ,lime juice.
- Transfer the salad to a serviing dish and garnish with the red chilli and serve
