Festive Rice
Serves: 8
Ingredients
- 2 ½ cups of fragrant rice
- 4 tbsp sesame oil
- 2 cloves of crushed garlic
- 2 finely sliced onions
- 5cm piece of crushed fresh tumeric
- 3 cups of water
- 1 400g can coconut milk
- 2 bruised lemon stalks
- 2 pandan leaves if available if not use lime leaves
Accompaniments
- Omelette strips
- 2 fresh chillies shredded
- cucumber chunks
- tomato wedges
- deep-fried onions
- prawn crackers
Directions
- Wash rice thoroughly and drain well.
- heat the oil in a wok or frying pan and fry the crushed garlic, onions and tumeric on a low heat for a few minutes until soft but not browned.
- Add the rice and stir well making sure the grains are soaked in the oil and is all mixed.
- Add the water and coconut milk, the bruised lemon grass and pandan leaves, season with salt to taste.
- Bring to the boil, stirring constantly. Cover and simmer until all the liquid is absorbed.
- Remove from the heat and stand in a warm place for 15 minutes. Remove the lemon grass and pandan leaves. Turn out rice on to a warm serving platter and garnish with the accompaniments.
