Festive Rice

  1. Wash rice thoroughly and drain well.
  2. heat the oil in a wok or frying pan and fry the crushed garlic, onions and tumeric on a low heat for a few minutes until soft but not browned.
  3. Add the rice and stir well making sure the grains are soaked in the oil and is all mixed.
  4. Add the water and coconut milk, the bruised lemon grass and pandan leaves, season with salt to taste.
  5. Bring to the boil, stirring constantly. Cover and simmer until all the liquid is absorbed.
  6. Remove from the heat and stand in a warm place for 15 minutes. Remove the lemon grass and pandan leaves. Turn out rice on to a warm serving platter and garnish with the accompaniments.
