The French Chocolate’ Cake

  1. Preheat the oven to 180degrees C. Grease and line the base and sides of a 23cm square cake pan.
  2. Combine the chocolate, butter, water and cocoa in a medium saucepan over low heat and cook stirring constantly for 4 minutes until the mixture is smooth and glossy. Transfer to a large bowl.
  3. To the chocolate mixture, add the egg yolks, sugar, almond meal and liqueur and stir to combine.
  4. Whisk the egg whites in a bowl with an electric mixture until peaks form.
  5. Add one-third of the fluffy egg whites to the chocolate mixture and gently fold until combined. Add remaining egg whites and fold until combined.
  6. Pour the mixture into the cake pan and bake for 40 minutes or until a skewer leaves the centre clean. Remove and place on a wire rack to cool.
  7. Combine the coffee and water in a bowl and add the mascarpone, icing sugar and liqueur and stir until well combined.
  8. Cut the cake into square slices and serve with the coffee mascapone.
