Chocolate Cupcakes

Sour cream ganache

Directions

  1. Preheat oven to 160degreesC. Line 80ml muffin pans with paper cases.
  2. Combine the chocolate and water in a small saucepan over a low heat, stirring constantly until chocolate melts and the mixture is smooth. Remove and set aside.
  3. Beat the butter and sugar with an electric mixer until pale and creamy. Add the eggs, one at a time, beating well between each addition, until all combined.
  4. Add all the flours and cocoa powder and stir until well combined.
  5. Add the melted chocolate mixture and stir to combine
  6. Spoon evenly into the lined muffin pans and bake in the preheated oven for 20 minutes of until a skewer inserted into the middle of the cupcakes comes out clean. Remove from oven and transfer to a wire rack to cool.
  7. For the ganache, place the chocolate and sour cream in a heatproof bowl over a saucepan of simmering water. Stir constantly until all the chocolate has melted and is smooth and glossy.
  8. Spread over each cupcake and set aside to set. Serve
